3/4 c. of oil (Canola is best)
2 c. sugar (you can use Truvia or Stevia for baking)
3 eggs beaten
2 tsp. vanilla
3 c. flour (you can use whole wheat just add 1/4 c. of water)
1 1/2 tsp. of baking soda
1 tsp. salt
1 c. pecans
3 c. chopped apples (leave the peels on just core and chop)
Top With:
2 tbsp. sugar
1 tbsp. cinnamon

Directions:
Mix as listed, adding the nuts and apples last. Do not peel apples just core and chop. Pour into a tube pan. If batter is too stiff add 1/4 cup of water. Sprinkle top with 2 tbsp. sugar and 1 tbsp. cinnamon. Bake 1 hour at 350º
