2 1/2 lbs zucchini squash
3 T butter or margarine
1/2 cup diced green pepper
1/2 cup diced onion
3 large tomatoes chopped
3 T flour
1 1/2 tsp salt
1/4 tsp pepper
1/4 tsp sugar
1 cup bread crumbs
1/2 cup cheddar cheese

Directions:
Directions:
Wash and slice zucchini. Cook in small amount of water until tender. Drain well and place in 2 qt casserole dish. Melt butter in skillet and saute green pepper and onion until limp, do not brown. Add tomatoes, sprinkle in flour and stir well. Cook for 2 to 3 minutes until vegetables and tender. Season with salt, pepper and sugar. Spoon mixture over zucchini. Combine bread crumbs and cheese and sprinkle over casserole. Bake 350 for 30 minutes or until cheese is melted, slightly brown and bubbly.
