6-8 ounces of dried navy beans (can use any kind of bean)
1 onion, finely chopped
¼ cup vegetable oil
4 garlic cloves, crushed
1 tablespoon curry powder
1 (14-ounce) can chopped tomatoes
4 tablespoons creamy peanut butter
Salt and pepper, to taste

Soak the beans overnight in water and drain. Put the beans in a pot with 3 1/2 cups of fresh water, bring to a boil and cover partially. Turn down to medium-low heat and simmer for 40-60 minutes until the beans are just tender.
Heat oil in large frying pan over med-high heat. Add onion and garlic, cook for a couple of minutes until tender, sitrring frequently. Add cury powder and tomatoes, mixing well. Add peanut butter to pot as well as 1 cup of water. Stir sauce well.

Preheat oven to 325ºF. Drain tender beans from water and put in oven-safe casserole dish, mix with peanut butter sauce. Bake, uncovered, for 1-2 hours until tender and to desired thickness.
