1 c. oil
3/4 c. honey or
2 c. sugar
2 c. grated zucchini
3 tsp. vanilla
2 c. flour
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon
1/2 tsp. baking powder

Directions:

Sift dry ingredients, plus add to other ingredients, mix and pour into 2 (greased and floured) loaf pans.

Bake 350 degrees for 1 hour.
Add raisins, nuts, or coconut if desired.

Although my sister gave me this zucchini bread recipe, I often substitute the zucchini with strawberries, use brown sugar, add 1 c. oatmeal and bake for @35 minutes.
