8-10 Pearl Onions (I used 6 small sweet yellow onions)
Olive Oil for Drizzling
Sea Salt and Freshly Ground Black Pepper
4-5 Sprigs of Thyme (I used more; one sprig per onion half)

Directions:
Directions:
Preheat oven to 400º
Slice onions crosswise leaving skin on
Drizzle onion halves with olive oil
Season with salt and pepper
Scatter thyme sprigs on top.
Roast for 40-50 minutes or until the onions are slightly caramelized and crispy on top.
Peel off the skins or serve with skins on.

I like to serve with the skins on for a beautiful, rustic presentation.
Delicious with burgers but would also be great with grilled steak and pork chops.
