2 tbsp butter
1 large onion, chopped
1 apple, chopped (peeled)
1 to 2 tsp curry
4 cups chicken stock
¼ cup uncooked rice (I used soup mix which contains lentils, peas, rice etc)
2 cups diced unpeeled zucchini (can also add carrot)
½ tsp salt (or to taste)
1 cup milk (I only added ½ cup)

Directions:

Melt butter, add onion and apple. Cook until soft.
Add curry and stir for 30 sec.
Add chicken stock, rice and zucchini.
Bring to a boil. Cover and cook for 30 minutes.
Blend with stick blender.
Add milk and serve.
