1 C Persimmon Pulp
1 tsp Baking Soda
1 C Butter
1 C Sugar
1 Egg
2 C Flour
1 C Raisins
1/2 tsp Baking Powder
1/2 tsp Salt
1/2 tsp Cinnamon
1/2 tsp Cloves, ground
1/2 tsp Nutmeg
2 tsp Vanilla
1 Tbsp Lemon Juice
1 C Walnuts, chopped

Directions:
Directions:
Heat oven to 350º. Dissolve baking soda in persimmon pulp, set aside. Add a tablespoon of flour to the chopped nuts, set aside.Cream butter, sugar and eggs. Add persimmon pulp to the creamed mixture. Add combined dry ingredients to creamed mixture and mix well. Add nuts, raisins, vanilla and lemon extract. Drop by spoonfuls onto greased cookie sheet. Bake for about 12 minutes.

These were one of my favorites when I was a kid. Grandma Patrick always made them around Christmas time and I could hardly wait for them! I'd pick out the raisins first and then eat the cookie :)
