Olive Oil 2 tablespoons
Chopped onion (one medium) 1 cup
Garlic cloves (minced) 4 - 5
Red bell pepper (chopped fine) 1
Carrot (grated fine) 1
Tomato paste 5 1/2 ounces
Canned tomatoes (broken up or
diced canned tomatoes) 28 ounces
Granulated sugar 1 tablespoon
Parsley flakes 2 teaspoons
Basil 1 1/2 teaspoons
Oregano 2 teaspoons
Chili powder 1 teaspoon
Salt 1/2 teaspoon

Directions:
Directions:
1. Heat oil in pot. Add garlic and onion and saute 5 minutes (until soft).
2. Add the rest of the ingredients: bell peppers, carrot, tomato paste, canned tomatoes, sugar, parsley, basil, oregano, chili and salt.
3. Mix together. Bring to a boil. Stir occasionally as you simmer it. Simmer uncovered. Simmer 15 minutes.
4. Serve over spaghetti noodles or favorite pasta.
5. Serve with Parmesan cheese on top.
