1 1/2 c. all purpose flour
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
1/2 c. unsalted butter, softened
1/2 c. granulated sugar
1/3 c. placked light-brown sugar
1 large egg
1 1/2 tso. vanilla extract
1 1/2 c. shredded zucchini
1 c. quick oats
3/4 c. chopped pecans or walnuts (optional)
1 2/3 c. chocolate chips

Preheat oven to 350 degrees. In a mixing bowl whisk together flour, cinnamon, baking soda and salt for 20 seconds, set aside.
With an electric mixer, mix together butter and sugars until creamy. Mix in egg and vanilla extract. Add zucchini and on low speed slowly mix in flour mixture.
Stir in oats, walnuts and chocolate chips. Shape dough into balls and transfer to a greased cookie sheets.
Bake for 11-14 mins until edges are lightly golden.
