1 (3-4 lb.) boneless chuck roast
1 lb. mushrooms
1 onion, sliced thinly
1 (10 3/4) can cream of mushroom
1/4 c. red wine
3/4 c. water
2 tbsp. Worcestershire sauce
1 tbsp. beef bouillon granules
2 tbsp. vegetable oil
3 cloves garlic, crushed
2 bay leaves
2 tsp. salt
2 tsp. garlic powder
1 tsp. black pepper

Directions:

Preheat oven to 350º.

Mix salt, garlic powder, and pepper in a small bowl. Sprinkle over all sides of roast.

Heat oil in a skillet and sear on sides just until browned. Place in Dutch oven or roasting pan.

Add onions, mushrooms, and garlic to skillet for 1-2 minutes to warm and absorb juices; add to Dutch oven. Cover roast with bay leaves.

Combine mushroom soup, wine, Worcestershire, and beef bouillon; mix until smooth and pour over the roast. Add water.

Cover and bake for 3 to 3 1/2 hours or until tender. Remove the bay leaves before serving.
