1/2 cup unsalted butter (Smart Balance or Earth Balance spread)
6 TBSP maple sugar (or coconut sugar)
1 tsp vanilla extract
1 cup gluten-free oat flour
1 cup almond meal/flour

Topping:
1/2 tsp ground cinnamon
2 TBSP maple sugar (or coconut sugar)

Step 1:
Preheat oven to 300º F. Grease cookie sheet, set aside.

Step 2:
With a hand mixer, blend the butter, maple sugar and vanilla extract until creamy. Add the almond meal flour and the oat flour and mix until the dough sticks together.

Step 3:
Form the dough into 1-1/2 inch balls. Place them on the prepared cookie sheet and bake for 30-35 minutes. Coat the cookies in the cinnamon/maple sugar mixture while they are still warm. Allow cookies to cool completely before enjoying.

Note: Can use coconut oil for part of the butter/margarine. All coconut oil makes the cookie too crumbly.

Note: Brown sugar can replace the maple sugar.

Roselyn uses coconut sugar instead of maple sugar and does not use the topping. It has become a favorite treat of everyone who tastes them!
