1 lb. fresh summer yellow squash
1/2 stick butter, melted
1/2 cup shredded or diced American Cheese
2 tsp. sugar
1/2 cup mayonnaise
salt and pepper to taste
1 egg
Topping:
1 stick melted butter
1 sleeve club crackers, crushed

Directions:
Directions:
Preheat oven to 350º. Trim and discard ends of squash and chop into bite-sized pieces. Place in saucepan, cover with water and a pinch of salt; simmer until tender, about 10 minutes. Drain thoroughly.
Stir in 1/2 stick of melted butter, American Cheese, sugar, mayonnaise, salt and pepper, and egg; mix well.
Grease a 8-inch glass Pyrex dish or well seasoned iron skillet and add mixture.
Topping:
Mix sleeve of crackers with 1 stick of melted butter and sprinkle over casserole. Bake 30-35 minutes.
