2 large Onions
2 to 3 T.Olive Oil
Salt and Pepper
Garlic Powder
Mint Extract (start with 1 tsp.)
1 sm. can Tomatoes
Fresh or frozen string beans, ends snipped, cut in half
Potatoes, peeled and cut into large cubes
Zucchini, thickly sliced, then halved or quartered

Directions:
Directions:
In a large, deep pot saute Onions, which have been cut up in large pieces. Saute until almost transparent. Add tomatoes which have been mashed a little. Season with salt, pepper, garlic powder and mint. Add string beans and cook til tender. Add potatoes and cut up squash and cook til all are tender. Taste to correct seasoning, adding more mint if necessary.
