1 c. canned unsweetened pumpkin
1 c. sugar
1/2 c. canola ( or vegetable oil)
2 eggs
1 3/4 cups of unbleached all purpose flour ( or whole wheat - add extra pumpkin for moisture)
1 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. ground cinnamon
1/2 tsp. ground cloves
1/2 tsp. ground nutmeg
1/2 tsp. salt
1 c. walnuts or pecans - chopped - optional

1. Heat oven- 350 degrees
2. Grease 8 x4 inch loaf pan
3. Beat the pumpkin, sugar, oil, and eggs in a large bowl
4. sift the flour, baking soda, cinnamon, cloves, nutmeg, salt, and baking powder into the bowl. Stir to combine all the ingredients. Fold in the nuts and pour into pan.
5.Bake for 60 minutes or until the top is lightly brown and a skewer inserted into the center comes out clean.

* Can be double wrapped in plastic wrap and stored in the freezer for up to 3 months. It usually doesn't last that long in our house.

I love everything pumpkin! When Jon and I were dating, he tried to impress me by making pumpkin muffins. He's quite the baker, so he did a great job! Jon loves the fall, and a clear sign of Fall is when I bake my pumpkin bread. The smell of pumpkin spice is one of the highlights of Fall. I found this recipe in the cookbook titled PUMPKIN: A Super food for all 12 months of the year by: DeeDee Stovel. It was given to me as a gift by a roommate when I was single.

On our first year of marriage, Jon and I made it a tradition to visit Half Moon Bay for their annual pumpkin festival. He used to go to this festival as a kid. I was delighted to find this recipe in this cookbook! I usually double the recipe and make two loaves. I make this bread throughout the Fall, and it's such a joy to make and eat.
