6-10 oz bacon cooked crisp. Drain bacon
Sauté onion fine chop.
Cook 1 lb pasta and reserve 1 1/4 c. pasta water
Add 2/3 c. cream, 2/3 c. wine white, 1/2 t. pepper to heated pan with bacon grease.
Heat and gradually add pasta water.
Then add 2/3 c. Parm and 1/3 c. Pecorino. Add more cream or pasta water as needed.
Fry 2-4 eggs in oil and butter
Add parsley at end and more Pecorino if desired
