7 slices bacon
1 onion, thinly sliced
1 clove garlic, minced
1 small head red cabbage, shredded
1/3 cup maple syrup or brown sugar
1/4 cup red wine vinegar

Directions:
Directions:
Cook bacon. Remove bacon and add onion and garlic. Cook till soft and lightly coloured, about 3 minutes. Add the cabbage and cook, stirring regularly till wilted, about 5 minutes. Add the maple syrup and vinegar and cook another 5 minutes. Season with 3/4 tsp. salt and several grinds of pepper. Serve warm.
