1 lg. can of sliced pineapple
maraschino cherries to place inside pineapple slices
1/2 c. butter
2 c. brown sugar
4 eggs, separated
1 c. sugar
1 c. flour
1 tsp. baking powder

Directions:
Directions:
Preheat oven to 350 º F. Pour melted butter into a 9" square pan; cover with brown sugar, spreading it evenly. Place 1 slice of pineapple in the center on top of the sugar and arrange the rest in rows radiating from the center. In the center of each slice add a cherry. Cover with sponge cake batter.

Cake Batter
Beat yolks and sugar until light; sift flour and baking powder and fold into egg mixture in three parts. Fold in stiffly beaten whites. Bake about 30 minutes. Turn out on platter and serve when cool.
