20 lbs of crawfish, shrimp or crab (any combination)
12 lemons, halved and squeezed (reserve juice)
12 onions, quartered
6 (3 oz) bags crab boil
2 heads garlic
3 tsp cayenne
2/3 box of salt
4 to 5 bay leaves
4 ears of corn on the cob
4 Irish potatoes

Purge crawfish and crabs by soaking in heavily salted water for 15 to 20 minutes, Do this at least 2 times, or until water is clear, While purging, have 5 gallons of water heating in a 15 gallon pot. Add lemons, lemon juice, onions, crab boil, garlic, bay leaves, cayenne and salt. After it comes to a boil add the seafood. Return to a boil and continue boiling for 10 minutes, Turn the heat off and let them stand for 30 minutes. Reserve liquid for addiional boils. Second boil follow above instructions and add your potatoes and corn after water comes to a boil separately, Drain and serve seafood with the corn, potatoes, crackers and beer,

Don's Hint: Use pot with strainer to drain seafood easily and keep reserve liquid for next boil. Boil potatoes and corn separately in 2nd boil so spices do not completely absorb into them.
