1 c. shortening
1 1/2 c. sugar
1 egg
3 1/2 c. flour
9 oz. crushed pineapple
1 t. soda
1/2 t. salt
1 c. chopped nuts

Directions:
Cream shortening, sugar, eggs and pineapple. Add dry ingredients and refrigerate 1 hour. Drop by teaspoon and bake at 400 degrees for 8-10 minutes.

Many years ago Mom and I took our crafts to a show in Gorham and while there we tried some of these pineapple cookies that were being served. Needless to say, we came home with the recipe!! These cookies are a nice moist, soft cookie.
