1 c. butter
2 eggs
1 t. ground lemon peel
1 t. cream of tartar
1 t. salt
2 t. vanilla
1 c. confectioners sugar
1 c. oil
4 1/4 c. flour
1 c. granulated sugar
1 t. baking powder

Directions:
Directions:
Cream sugar and butter. Beat in eggs one at a time until fluffy. Add oil, vanilla and peel. Add dry ingredients and beat until well blended. Bake at 325 degrees on cookie sheet by making 1 inch balls and flatten them with a press or a plastic thread spool after paper has been taken off. Bake about 10 minutes.

This makes a very large batch of yummy sugar cookies that is a favorite of my family. I usually decorate them with a few sprinkles of colored sugar before baking. I also have used these in my cookie press making different shapes and they come out very well. This recipe was from Aunt Joan Emerson.
