14.5 can chicken broth
3/4 c. couscous
1/2 tsp. Greek seasoning
1/4 c. Pine nuts, toasted
3 c. chopped rotisserie chicken
1/4 c. chopped fresh basil
1 tsp. lemon zest
1 1/2 T. fresh Lemon juice
4 oz. crumbled feta cheese
Fresh pepper
Grape tomatoes, halved (opt.)
Pitted Kalamata olives(opt.)
Artichoke hearts, chopped (opt.)

Directions:
In a medium saucepan, over medium high heat, toast pine nuts until lightly toasted and aromatic, place in a small bowl for use later. Add chicken broth, couscous and Greek seasoning to the covered saucepan and bring to a boil, remove from heat. Let stand for 5 minutes. Add hot chicken, lemon juice and zest, pepper, basil, feta cheese and pine nuts; stir to combine. Serve topped with halved tomatoes, olives and artichoke hearts as you like.
