Ingredients:  
Ingredients:  
3 or 4 skinless chicken breasts;
1 small onion chopped;
1 jar of mild salsa;
1 can chili ready tomatoes or fire roasted tomatoes;
1 number 10 can of chili beans;
1 package of chili seasoning OR garlic, salt, pepper, onion powders;

Directions:
Directions:
Place onions in crockpot
Place seasoned chicken on top of onions;
Gently pour in salsa and tomatoes;
PUT on lid and simmer for 4-6 hours;
Remove chicken and let rest 5 minutes or so before cutting, set to side to add back later;;
Add can of beans and stir,
Add more seasoning to taste;
Add a sweet element a dab of jalapeno jelly or sweet baby rays sauce (ONLY A LITTLE, so it will not overwhelm the dish);
ADD the chicken back in and stir in;
Turn crockpot on low and stir if on buffet style serving to avoid beans from scorching.
READD the shredded chicken

Makes enough chili to have left overs for chili dogs and chili nachos later in week. I love to pour on Nachos and top with green onions,cheese and sour cream. Good for football season.
