1 lb dried red beans
2 ham hocks
8-10 cups water
1 (8 oz) can tomato sauce
2 tsp garlic salt
1/4 tsp Tabasco sauce
1 tsp Lea and Perrins Worcestershire sauce
1/2 lb diced ham
1 lb smoked sausage
1/2 cup chopped celery
1 cup chopped onions
3 cloves garlic, pressed
2 bay leaves
salt and pepper to taste
2 cups rice, cooked

Directions:
Directions:
Prepare the beans according to instructions on bag, Cut and slice sausage. In a large frying pan, sear sausage, ham, and ham hocks. In another pot, begin warming water with beans. Drain your meats in a colander excluding ham hocks. Add ham hocks to water. Saute celery, onions and garlic and add to water. Add tomato sauce, garlic salt, bay leaves, Tabasco and Worcestershire and salt and pepper to water.. Add your meats and bring to a boil. Put on low fire after it comes to a boil, stirring constantly until tender. Serve the beans over Don's rice. (See rice recipe)
