9 medium potatoes, peeled and diced
1/3 cup butter
1/3 cup flour
2 1/4 cups light cream or milk
2 tsp. salt
1/8 tsp. pepper
1 4 oz. pkg. shredded cheddar cheese (1 cup)
3 tbsp. dried bread crumbs

Directions:

1 hour before serving. Preheat oven to 375º. In large saucepan melt butter. Whisk in flour until well blended and smooth. Gradually add cream and cook, stirring constantly, until mixture is thick and bubbling. Stir in salt and pepper, then gently add potatoes. Pour potato mixture evenly into 12" x 8" baking dish. Sprinkle with cheese, then the bread crumbs. Bake 25 minutes or until cheese is melted and mixture is bubbling.
