1 gal. Peeled Tomatoes
4 med. Onions
4 med. Bell Peppers
2 Jalapeno Peppers
6 lrg. Cloves of Garlic
1 1/2 cup Cider Vinegar
6 tbsp. Sugar
1/4 cup Salt
1/2 tsp. Oregano
2 tbsp. Cumin
3/4 tbsp. Chili Powder

Directions:
Chop all the vegetables to a size you like. Put in a large sauce pan. Add remaining ingredients. Simmer until reaching a slightly thickened consistency. Must be stirred and watched to keep from sticking to the bottom of the pan. Ladle into sterilized pint canning jars. Take a clean wet paper towel and clean the outside edges and top of jar. Apply new lids that are in boiling hot water. Screw on rings tightly. Wait until each of the jars ping (a sign that they are sealed). Process in boiling water bath for 15 minutes. Makes about 8 pints.

(To peel tomatoes: Bring water to a boil. Put tomatoes in a wire basket and dip in the boiling water for 1-2 minutes. Remove from hot water and put in cold water. Tomato skins should just slide off.)
