1/2 cup butter
1/4 cup icing sugar
1 cup flour

Preheat oven to 325ºf

Cream all ingredients together and press into mini muffin tins. Bake 8-10 minutes until very lightly browned. Let rest in teh pan 5 minutes (very important, or else you will end up with crumbs!) Fill shells with any filling that does not need to be baked - for example, choclate pie filling, lemon, berries and cream etc.

Unfilled tart shells freeze VERY well. I often bake up a large batch and keep them in the freezer until I need an potluck dish or quick dessert. My favourite filling is bottled lemon curd that you can find in the jam aisle of your grocery store
