Ingredients: 2 lbs lobster meat, chilled and chopped into chunks (from about 10 lbs. live lobster boiled with Old Bay seasoning added to water) 1 c. finely chopped celery 1/2 c. finely chopped onions 1/2 t. salt 1/4 t. pepper 3/4 c. to 1 c. Hellman's mayonnaise

Directions:Gently toss all ingredients together until well mixed. Chill at least 30 minutes, up to overnight. Serve in toasted, top sliced hot dog rolls. Serves 6. |

Notes: If you are not going to use this immediately, "dry" the celery before adding it to the lobster. Do this by wrapping the chopped celery in several thickenesses of paper towel and letting it set in the refrigerator for 15 or 20 minutes. This will release the natural moisture in the celery and not make the lobster salad soggy.
