1 lb. fresh spinach
1 medium head lettuce
1 (16oz) can mandarin oranges, drained
1 cup peanuts or cashews
1 (8 1/2oz can) artichoke hearts, drained and cut up
1 (8oz can) pitted ripe olives, sliced
1/4-1/2 lb. Swiss cheese, cubed
Chopped green onion - or sliced red Bermuda onion

DRESSING:
1/3 cup granulated sugar
1 tsp. dry mustard
1 tsp. salt
Freshly ground pepper
1/3 cup red wine vinegar
1 cup oil
1 tbsp. celery seed
1 tbsp. grated onion

Directions:
Directions:
Tear spinach and lettuce into bite sized pieces. Layer spinach, lettuce, peanuts, artichokes, olives, cheese and onion in large bowl.
Combine dressing ingredients in blender-blend well. Pour over salad ingredients just before serving. Toss until coated.
