3-4 lbs skinless, boneless chicken
cornstarch
1/2 tsp salt
1/2 tsp ground white pepper
eggs
1 qt vegetable oil for frying

Directions:
Directions:
Mix together cornstarch, salt, and white pepper. Cut chicken up in chunks. Dip pieces of chicken in cornstarch, egg, then back in cornstarch. Heat oven to warm. Heat oil in skillet. You will want it about a medium-high heat setting. Fry chicken pieces in hot oil about 10 minutes, or until golden, flip them a couple times. I do this in two batches. Remove chicken, and drain on paper towels. I put it in the oven to stay warm until I have all of the chicken fried and the sauce ready to pour over.

Sauce:
1 1/2 c white sugar
2/3 c white vinegar
1 1/4 c water
1/2 c soy sauce
2 tbls ketchup
4 tablespoons cornstarch

Whisk everything together in a medium saucepan. Bring to a boil over a medium heat stirring frequently. Pour over your prepared chicken and serve everything warm.
