vegetable oil
1/2 c chopped onion
3 1/2 c chicken broth
shredded queso (cheese)
1 c tomato sauce
1 tsp ground cumin
2 tsp garlic salt
chihuahua (walmart carries it)
1 small can diced tomatoes
2 c un-cooked long-grain rice
1/2 tbls caldo de tomate (in spanish section of grocery)
chicken strips (can cook on George Forman or grill or boil)

Directions:
Heat oil in a large saucepan over medium heat and add rice and onions. Cook, stirring constantly, until puffed and golden. Combine tomato sauce, broth, and juice from diced tomatoes in a medium sized bowl; add in garlic salt, cumin, clado de tomate and stir together. Put rice and mixed ingredients together in a rice maker or cook on stove top (I personally never had any luck cooking rice until I got the rice maker). When rice is done spoon into 10 x 13 baking pan, mix part of the queso in with the rice, layer chicken on top of rice, top with remaining queso, put in oven on 400° F until melted. Serve with tortilla chips or spoon over tortillas. Top with salsa, sour cream, guacamole etc.
