Ingredients: 12 - 20 ripe tomatoes (enough to make about 3/4 gallon) 2 green bell peppers 2 chocolate bell peppers 2 candy onions large handful fresh cilantro 5 tablespoons fresh lime juice 2 jalapeno pepper with seeds 6 chili peppers with seeds 1 heaped tbls ground cumin 2 heaped tsp kosher salt 2 teaspoon ground black pepper 1 c hot pepper concoction
Hot Pepper Concoction 4 peppers (anaheim, bishop's crown) no seeds 4 jalepeno peppers, with seeds 4 hotter than jalepeno, no seeds 3 chili peppers, with seeds 3 medium tomatoes

Directions:Chop tomatoes in vitamix. I do this in batches and then pour into a plastic gallon pitcher as I go. I add the other ingredients to the tomato chicks as I go and just pulse it to the consistancy that I want. Add 1 cup hot pepper concoction or 6 frozen cubes. Keep in the fridgerator or proceed with canning. 30 minutes hot water bath. 1/2 inch head space.
I mix my pepper concoction seperate and then add the heat last to taste. I add a couple tomatoes to the pepper mix to give it enough juice to puree in the vitamix. I add 1 cup per gallon of salsa, then freeze the rest in an ice cube tray. 6 cubes equals about 1 cup. |
