16 pieces white bread, crusts removed
8 oz. Cheddar cheese
8 slices Canadian bacon
6 eggs, beaten
4 cups milk
2 tsp. .salt
1/4 tsp. white pepper
Currant jelly

Directions:
Directions:
Butter the bread slices. Generously butter a 9 x 13-inch baking dish. Arrange 8 slices of the bread in the dish. Cut the cheese into 8 slices. Place a piece of cheese over each slice of bread. Place a slice of Canadian bacon over the cheese. Top with the remaining bread slices. Combine eggs, milk, salt, and white pepper and miz well. Pur over the bread. Cover and refrigerte overnight.

Preheat oven to 350º F. Place the baking dish in a water bath. Bake for approximately one hour, or until puffed and brown. Cut into 8 squares. Serve with a dollop of jelly on each piece.

Canadian bacon is very lean. For a delicious flavor, use a home-cured variety, if possible, in this easy brunch or luncheon dish.

This is a frequent dish at the Kempf brunch buffets for Christmas and Easter holidays. There was a note on the recipe that this was used at a Mark Kempf family gathering at Virginia Beach, Virginia, July 2006.
