4 cups dried navy beans
12 cups cold water
1 teaspoon baking soda
1 pound thick sliced bacon
1 large onion (chopped)
1 teaspoon dry mustard
1 cup maple syrup
½ cup molasses
1 Tablespoon coarse salt
½ cup rum (preferably dark)

Cover the beans with 12 cups cold water. Let soak overnight.
In the morning pour the whole thing in a large saucepan. Add 1 teaspoon soda and more cold water to cover the beans if necessary. Bring to a boil, uncovered, then boil until some of the skins come off when you blow on the beans.
Remove from heat. Add the chopped onion, dry mustard, maple syrup, molasses, coarse salt and rum.
Cut the bacon slices in half and line a bean pot or casserole dish or 2 casseroles with the bacon slices, saving some for the top. Put the bean mixture in the dish(es). Put remaining bacon over the top.
Bake 4 to 5 hours in a 325 degree oven or until the beans look dark around the edges and the bacon on top looks cooked.
If preferred, save the rum and pour over the casserole after baking.
