1 splash milk
various cut up veggies of choice
cheese

Spray a cupcake pan with non-stick spray. Fill each cup with your favorite ingredients, ham & broccoli, chicken & carrots, spinach with feta and tomatoes, steak and bell peppers or whatever you have in your refrigerator. If you add all veggies raw, they will cook to perfection during baking process. Mix 1 egg and splash of milk for each cup. Pour into cup just below the rim. Top with shredded or sliced cheese. Bake at 425º for approximately 20 min. Let cook before removing from pan. May be kept in refrigerator and reheated in microwave.

I have used ham and cheese, or mushrooms and spinach with cheese. A quick breakfast when you are in a hurry when made ahead of time and kept in refrigerator.
