> Breast of veal about 3 1/2 - 4 lbs
> 1/2 lb sausage meat
> 2 eggs slightly beaten
> Pepperidge bread crumbs (1/2 - 1 cup)
> 3 T grated cheese
> 1 clove garlic finely chopped
> 3 T olive oil
> 1 T rosemary
> 1 cup dry white wine
> 1 t garlic powder
> 3 potatoes (sliced lengthwise)

-Preheat oven to 400º
-Blend sausage meat, eggs (slightly beaten), crumbs, cheese, garlic, salt, and pepper to taste
-Stuff pocket and sew pocket
-Rub veal with 1 T olive oil, rosemary salt and pepper and garlic powder
-Place in baking pan and pour remaining olive oil over veal
-Bake uncovered until it begins to brown
-Add wine
-Cover and baste often...(adding stock or water if necessary)
-After 50 min add (3) potatoes sliced lengthwise
-Cook about 30 more min
