Ingredients: 1 beef roast 1/4 cup oil salt & pepper to taste garlic powder 2 cloves garlic, chopped 1 large onion, chopped 6 medium potatoes, cut into quarters 1 lb carrots, cut up flour

Directions: |
Directions:Pour oil in skillet and get very hot. Season roast with salt, pepper and garlic powder. Brown roast in skillet on all sides. Set skillet aside and save for later. Put roast in big pot of water and start to boil. Add garlic powder, a little salt , pepper, garlic cloves and onion to the pot. Cook on a low boil until roast is almost done. Add potatoes and carrots. Cook until tender. Remove from pot and put in serving dish that has sides. Put skillet back on stove and turn on high. When oil is hot, add enough flour to soak it up. Stir until brown then turn off fire. Add some of the broth the roast was cooked in. Add just enough to make a good gravy, stirring constantly. Pour over roast and vegetables. |

Notes: Many of my family recipes don't have exact measurements. Everything is seasoned to taste and no one could do it better than my Mama on my mother's side. This recipe is my Great, great grandmother Davis' and it has been passed down. It took me many years to perfect the gravy but I think I've finally got it now :)
