1 cup fresh spinach
2 TBS Engine 2 Salsa
1/2 package Engine 2 Fiesta Blend Grain Medley
1 Engine 2 Ancient Grains or Brown Rice Tortilla
2 slices avocado (optional)
Chili powder (to taste)
Directions:
Directions:
Heat up tortilla using a tortilla shell pan. Bake for 10 minutes on 350.

Heat up Fiesta Blend in a stove top pan or pot, adding a little water as you stir.

Cook till heated all the way through.

Take tortillas out of the oven, fill with spinach, Fiesta Grain Blend, top with spinach and a few slices of avocado and top with chili powder.
