Ingredients:  
3 large Spanish or Vidalia onions thinly sliced
2 Tbs butter
1 Tbs flour
3 cups College Inn consommé
3 cups water
¼ cup boiled milk
¼ pound grated Swiss cheese
Dash of Harvey’s Bristol Crème (or sherry)
1 Tbs melted butter
4 dried slices French bread
salt and pepper

Directions:
Directions:
In a pot cook onions till slightly browned.
Add flour and stir well.
Add sherry, consommé and water, bring to a boil, stirring constantly.
Then simmer gently for 20 minutes uncovered.
Add milk.

Pour into individual onion soup bowls.
Place slices of bread on top.
Sprinkle generously with cheese.
Add pepper.
Sprinkle with melted butter,
Heat in oven till bubbly.
