1/4 cup butter
1/4 cup dark brown sugar (firmly packed)
1 can sliced pineapple ( 20 oz. size in heavy syrup)
9 maraschino cherries
1/4 cup pecan halves
1 1/2 cups sifted AP flour
2 tsp baking powder
1/2 tsp salt
1 cup regular sugar
1/4 cup vegetable shortening (Crisco)
3/4 cup milk
1 tsp vanilla extract
1 egg

For Fruit Sauce;
1 Tblsp cornstarch
2 Tblsp dark brown sugar
reserved pineapple syrup
reserved pineapple slices
2 tsp lemon juice
1 Tblsp butter

Directions:
Directions:
Preheat oven to 350º.

Place butter in a 9x9x2" pan, set over low heat to melt butter (or microwave) swirl to cover bottom of pan to make sure surface is covered. Sprinkle brown sugar over bottom of pan. Drain pineapple and reserve syrup and 1 slice of pineapple for fruit sauce. Arrange remaining slices in bottom of pan and press one cherry in center of each slice. Then arrange pecan halves between pineapple slices make sure to place rounded side of each pecan half towards bottom of pan so flat side is facing up.

Sift all of the dry ingredients together except sugar. Once sifted stir in sugar. Add in milk and shortening, beat at medium speed for 2 minutes, then add vanilla and egg and continue to mix an additional 2 minutes.

Spoon batter carefully over mixture in pan.Gently spread to make even. Bake 50 to 60 minutes.

Once done remove from oven and place a flat serving platter over p an and then invert, leave it for a couple of minutes then remove pan.

Next mix cornstarch and sugar in a small saucepan, stir in pineapple syrup slowly keeping mixture smooth, place over medium heat . Cook stirring constantly until sauce is thickened and clear in color.
Remove from heat and chop up pineapple slice, then add pineapple and lemon juice and butter to sauce mixing well. Serve warm over warm cake.
