1-1/2 cups fresh blueberries
1-1/2 cups flour
1/2 tsp salt
3 T sugar
1 T baking powder
1 egg, lightly beaten
3/4 cup milk
3 T melted shortening

Directions:
Directions:
Preheat oven to 400º. Wash and drain blueberries thoroughly. Sift together dry ingredients. Stir together beaten egg and milk and then stir into flour mixture. Add berries and melted shortening. Mix well and pour into greased muffin tin, filling each cup 2/3's full. Bake for 20 minutes.

Yields: 9-12 muffins

Butter or margarine can be substituted for shortening.
