6 medium to large russet potatoes
1 chopped celery stalk
1 boiled egg, sliced
1 shredded carrot
1 can of large pitted olives, drained (do not chop)
1/2 small minced onion
1 tsp. of relish
salt and pepper to taste
3-4 heaping T. of mayonnaise (preferably Best Foods brand)

Boil potatoes, cool, then peel. If possible, refrigerate overnight. If you don't have time, chill in refrigerator for at least 1 hour. Chop the onions, celery, egg, & carrots while waiting for the potatoes. Mix all ingredients together and add the mayonnaise. Do not add too much mayonnaise. Some of the potato should only lightly be covered with mayo. Chill in the refrigerator prior to serving.
