4 potatoes
1/4 c. chopped onions
2 tsp sugar
1/2 c cider vinegar
1/2 tsp salt
6 slices bacon
1 1/2 tsp. cornstarch/flour
1 tsp. prepared mustard
2/3 c water
1/8 tsp. pepper

Directions:
Directions:
Cook potatoes in boiling water until tender.
WHile potatoes are cooking, fry bacon until crisp. Drain, crumble and set aside.
Drain potatoes and cut into cubes.
Saute onion in bacon drippings until tender.
Blend in flour, sugar, vinegar, mustard and water.
Cook, stirring constantly, until thickened.
Season with salt and pepper.
Add diced potatoes and 1/2 of crumbled bacon.
Garnish with remaining bacon and parsley, if desired.
Serve warm.
