Batter:
1 cup Oil
2 Cups Sugar
3 Lg Eggs (well beaten)
3 Cups Flour
1 tsp Salt
1 tsp Baking Soda
1/2 tsp Nutmeg
1/2 tsp Cinnamon
2 tsp Vanilla
1 Cup Chopped Nuts (Walnuts or Pecans)
3 Medium Sz Apples (peeled & chopped)

Icing:
1 Stick Butter OR Margarine
2 Cups Brown Sugar
1/2 Cup Evaporated Milk
1 tsp Vanilla

Directions:
Directions:
Mix oil, sugar and eggs together. In another bowl sift together the dry ingredients.
Add the egg mixture together with the flour mixture. Mix well. Add chopped apples and nuts. Mix well. Pour batter into an 11X7 cake pan.
Bake @ 350 about 1 hr

Icing:
In a medium saucepan melt butter. Stir in brown sugar. Add milk and vanilla. Stirring constantly over med-high heat bring to a boil. Boil for 1-2 min. POUR HOT ICING over cooled cake.
