Grandmas' Baked Rice Pudding Recipe

2 Cups Milk
1/2 Cup Rice
4 Tbs Butter
3 Lg Eggs (beaten)
1 tsp Vanilla
1/2 tsp Salt
Cinnamon
Nutmeg

Directions:
Directions:
In a sauce pan heat milk, and rice until it comes to a boil. Reduce heat. Cover and continue to cook until until rice is tender (about 15 min).
Remove from heat and stir in butter until melted. Set aside. In a large mixing bowl, combine eggs, sugar, vanilla and salt. Gradually add rice mixture. (Be careful not to add too fast or you'll wind up with scrambled eggs.)
Pour mixture into an 11X7 baking dish.

Bake @ 325 for 30 min
Remove from oven and stir. Sprinkle cinnamon and nutmeg on top. Return to oven. Cook an additional 25-30 min.
