2 1/2 Lemons' Juice OR 1/4 cup Real Lemon Juice
1 tsp. Grated Lemon Rind
2 tbsp. Cornstarch
1 tbsp. Flour
1 1/2 cup Sugar
3 Eggs, separated
2 cups Hot Water
1 tsp. Butter or Oleo
1/2 tsp. Salt

Directions:
Directions:
Grate lightly the rinds of lemons in a pan or bowl if you make in the microwave. Add sugar, flour, salt, and cornstarch, stir. Then add the hot water. Cook until it begins to thicken, set off of the fire for a minute or remove from the microwave. Separate the eggs, beat the yolks slightly, then pour some of the hot filling into the egg yolks, beating all the while. Then put back into pan with the rest of filling. Stirring well and cook for a few minutes until clear and thick enough. Then add butter or oleo and stir. Cool! Pour into a baked single pie shell and top with the meringue.
