1 cup soft butter or margarine
2 cups sugar
2 eggs
2 cups un-sweetened applesauce
3 teaspoons ground cinnamon
2 teaspoons ground allspice
1 teaspoon ground cloves
1 teaspoon salt
2 teaspoon baking soda
4 cups flour
1 cup nuts, chopped
Powdered sugar

Directions:

Cream butter and sugar. Add eggs one at a time. Mix in applesauce and spices. Sift together, salt, soda and flour. Add to applesauce mixture and beat well. Stir in nuts, Bake in lightly greased mini-muffin pans at 350º for 8-10 minutes. Sprinkle with powdered sugar. Batter will keep for months in the refrigerator. Baked muffins freeze very well (reheat in microwave for a few seconds). Can also make standard sized muffins, just adjust baking time.

Yields: 84 small muffins
