1 small ham shank
cold water to cover
1 C split peas
1/4 C coarsely chopped onion
1/2 tsp salt
1/8 tsp pepper

Wash ham shank; place in deep, heavy cooking pot; add cold water to cover; put lid on pot; simmer until tender. Strain broth, cool; skim off fat. Measure water to make 1 quart of liquid. Heat broth to boiling point; add onion, split peas, salt, and pepper to broth. Cover pot and bring to a boil; reduce heat and let simmer for 1 to 1 1/2 hours. Stir occasionally.

After preparing a ham dinner, boil the bones after removing all remaining meat. Make the broth and freeze it in zip lock bags. When you feel like having split pea soup (or navy bean soup), thaw and make this recipe. Norene made us lots of soups when we were children. This and Navy Bean Soup were two of my favorites. Use the same recipe to make Navy Bean Soup. She always added catsup to the Navy Bean Soup after spooning it into our bowls.
