1-3/4 cups reduced-fat variety biscuit mix
1/2 cup sugar
1/2 cup skim milk
1/4 cup plain nonfat yogurt
2 egg whites or 1/4 cup egg product
1 T poppy seeds
1 tsp grated lemon peel
1/2 cup fresh or frozen cranberries (thawed)

Directions:
Directions:
Preheat oven to 400º. Line 12 muffin cups with paper cups or grease cups. Stir all ingredients, except cranberries, until moistened. Stir in cranberries. Fill muffin cups 3/4 full. Bake 18-20 minutes or until golden brown. Immediately remove from pan.

Makes: 12 muffins
