>1/2 cup olive oil
>1/2 cup chopped onions
>2 potatoes cut up (bite size)
>two of the following: yellow squash, zucchini, peppers (all chopped in bite size pieces)
>1/2 lb string beans
>chopped up basil
>salt and pepper

Optional- 1 tbsp tomato paste, white or red wine, garlic powder, Italian seasoning

-In a frying pan heat olive oil, add potatoes and onions...cook slowly
-Meanwhile, in a pan cook 1/2 can - 1 can strained tomatoes (squeeze them also) add to this plenty of basil.
-Before adding the string beans you need to blanch them and then cut them in half (don't add them until almost the end of cook time)
-When potatoes are almost soft add to pan (uncovered) all vegetables except string beans
-Keep turning vegetables with the potatoes and onions.
-After about 10 minutes add tomatoes, cook slowly on low heat covered 15-20 minutes.
-Add string beans with about 5 minutes left.
-Add salt and pepper to taste.
*Optional ---may add 1 tbsp tomato paste or more if desired, a little red or white wine, garlic powder, Italian seasoning
