1/4 cup flour
1 cup sugar
1/4 tsp salt
1 T grated lemon rind 1 (1 lemon)
1/4 cup lemon juice
2 egg yolks, well beaten
1 cup milk
2 egg whites, stiffly beaten

Directions:
Directions:
Heat oven to 350º. Sift flour, sugar and salt together into mixing bowl. Stir in lemon rind and juice, egg yolks and milk. Fold in beaten egg whites. Pour into 1-quart baking dish or 6 custard cups. Set in pan of hot water (1" deep). Bake 50 minutes. Serve warm or cold, with or without whipped cream.

Makes: 6 servings. Delicate cake and refreshing lemon sauce in one pudding.
